Because of where the audience directs their gaze, everything they see is real. And everything off to the side is fake. Scientist found out that the audience is mostly drawn to the faces and explosions. Movie makers draw most attention to the faces and physics in action films because those are the types of things that can't be faked. They also say the brain is the best visual effects tool. The way our brain works will "stitch everything together so they will make sense". The way our brains "stitch" things together is by looking at one thing at a time and taking bits from here and there and they fit together.
I think it probably makes their jobs a lot easier the way they do this. They can just use CGI for things in the background and spend more time on the big things. I'll admit I'm more into monster films than action hero movies. Because I can get sick of all the car rolling and explosions sometimes. But it seems it keeps audiences entertained so they probably won't stop.
